The best time to go isn't on a Friday or Saturday night after 10pm, the best time and most valued experience is before 10pm or avoiding peak "nightlife" hours or during the week when things are slower in general. The hidden treasure during these non-peak hours is getting one-on-one time with the bar tenders. Watching how they take care in making the drinks and how detailed and precise they are with every pour. The interaction is better also. If you're interested in how the cocktail was put together and what you should be tasting just ask the bartender. Another fun thing to do is ask the bartender for drink options. This is a great experience. The bartenders are so good at what they do you can give them a few details (what you like, don't like, specific liquors you like/don't like, tastes--citrus, refreshing, sweet, dry, etc.) and they will recommend one of their existing cocktails or if you're lucky they will create a new cocktail or test a developing cocktail on you. If you're into more than just a "bar-scene" and care about great tasting alcohol or cocktails... not to get drunk but to appreciate great quality. This the place. They also have a coin you can buy for $20 and it gets you discount on all your future drink purchases (Sundays through Thursdays).
