Qué harás

First, we will meet me at La Luna Cafe and start with a freshly brewed cup of coffee. At that time we can discuss your baking background and areas we should focus on during the demo. From there, I will teach some of my favorite tricks of the trade. We will also discuss wheat flour compared to gluten-free flours, rolling pin styles, and surfaces ideal for working with dough. We will walk through techniques for how to make a pastry crust that is ideal for pies, a perfect starting point for sweet and savory treats alike. Speaking of savory treats, in the class you will get to make your very own crostata - an Italian free-form tart which you can lord over your friends and foes alike. The crostata is yours to take home as well as your newly acquired pro-tips. We encourage you to awe your coworkers and family with your freshly honed baking skills! Best yet, while your delights are in the oven, we'll even treat you to brunch in our cafe. At that time we can discuss general baking curiosities so you want to bring questions or recipes that need a little trouble shooting.

In 2006, I graduated from the Culinary Institute of America, in Hyde Park, New York, with an Associate’s degree in Baking and Pastry Arts. Portland has been my home since 2007, where I've been the pastry chef of many popular restaurants: Meriwether’s Restaurant, Olympia Provisions, Bethany’s Table, Aviary Restaurant, and currently at La Luna Cafe. I've also spent time in the kitchens of Pix Patisserie, Little Bird Bistro & Pie Spot Bakery.

The class will be held in the hustle and bustle of La Luna's commercial kitchen. As such, I highly recommend comfortable, closed-toed non-slip shoes.
