We will prepare a proper Italian Risotto *without stirring it*.
Arborio, Vialone Nano, Carnaroli? Sant'Andrea? Aged rice? Let's have a trip around all the best quality of Italian rice!
Starting from the scratch, we'll talk about the different rices, we'll make a proper broth, we'll see how to toast the rice and so on!
We will choose what rice to use and talk about every single step in the preparation.
We will prepare the Risotto with seasonal ingredients or you may choose them through a creative process OR to request, if you have some ideas :)

*** Some days seems to don't have free booking places, but just write me and we'll check if we may manage to do it anyway, there are lot of people who need to move the time of reservation, so new open places may be available anytime ***

I do this Risotto class because I really love making Risotto :)

Dónde estarás

Via del Pratello's spirit represents an intact evidence of the city's nightlife tradition, where students and locals converge giving life to a dynamic and vibrant street. Its historical pubs - cheap and no demanding - are the shelter for endless chatting with the company of a beer/glass of wine.
We'll be in our typical Bolognese apartment, with a window to the Pratello movida and another one which looks at the red roofs.

Perfetto! Sono molto contenta di aver fatto questo corso. Dennis risponde subito e è molto gentile. La sua casa si trova pochi minuti dal centro. Abbiamo fatto esattamente il risotto che io volevo preparare (con un riso vecchiato, vino bianco, zucchini, feta e limone/arancia). Dennis mi ha spiegato che tipi di riso ci sono, quando si usano e perché non ogni arborio che compro ha lo stesso gusto. Io so adesso perché non si dovrebbe tastare il riso con olio o con cipolla e Dennis mi ha anche fatto vedere come si può servire il risotto sul piatto. Non vedo l'ora di cucinare un risotto da sola! :)

It is great experience to make Italian risotto in Italy with Italian and nice person as Dennis is! I learned a lot about rice, ingredients and ways how to prepare it. Grazie.

This experience was absolutely amazing! It definitely exceeded all my expectations. I'm a big fan of Italian cuisine and have taken several different classes over the past years, and can say that this class was really really worth it. Dennis explained everything so clearly for me, he was extremely nice, patient and professional. He knows exactly what he is doing and have excellent teaching and cooking skills. We've prepared a risotto together, Dennis explained me the differences between the types of rice, and shared the secrets to cooking a perfect Italian risotto, something you won't find in other classes where you just learn a recipe and that's it. This experience made me feel really confident for the next time I'm cooking a risotto, and I can't wait to try the new skills I've acquired during the class, in my own kitchen!

I was disappointed with the quality of the experience. I thought it would be hands-on, but it as entirely run by Dennis with our only interaction being the sampling of the broth every 15 minutes. He also lacked enthusiasm and seemed more interested in getting his run in before his other two classes/experiences. Please note that the class only lasts around 1.5 hours and the rest is empty time. He also did not have prepared recipe handouts to distribute so we could take home and learn from the experience(he later e-mailed a paragraph that didn't really list all the steps that a beginner cook needed to replicate the experience). I personally don't think it's worth the price of admission nor is it a good learning environment. Just go if you want to watch someone cook and then eat afterwards.

Kochen mit Dennis ist einfach authentisch, von anfang an. Die Buchung hat problemlos geklappt, auch konnten wir eigene Wünsche anbringen. Dennis hat uns super lieb in seiner Küche empfangen und so vergingen die 3h wie im Fluge. Wir kommen wieder :)

Nice experience where I really learn how to make a propper Risotto. Dennis has a lot of knowledge and is passionated about thia dish. He is also a good teacher. I had honour to have a one on one session and I enjoyed it very much.
